Animal Crackers

In the span of Henry's 2+ hour nap this morning, in addition to showering, checking facebook, and writing this blog Lucy and I whipped out 3 trays of these homemade animal cookies!! This is my new favorite recipe! I was looking on a website for cookie cutters, and saw this recipe for animal crackers. I had just a tiny bit (1/4 cup plus a few drops) of buttermilk left from making awesome blackberry and blueberry muffins this week. I was thinking the buttermilk would get wasted, but NO! The recipe called for such small amounts, I was able to whip it up in my mini-food processor, and we were done in a flash. Be sure to roll the dough super thin though to get that cracker taste. It took us till the 3rd tray to perfect them, but the cookie-ish thickness taste good too. The dough was so easy to work with, even for little helper hands. I have accumulated several "mini" cookie cutters, that are kind of annoying to try and decorate for sugar cookies, but they are perfect for these little crackers! (I think it took longer to link everything and write this blog than it did to actually make the cookies!)
